Riviera Bar and Grille

February 2nd, 2018

GREEN BAY, Wisconsin- My mom and I decided to go to Riviera Bar and Grille and eat their fried cheese curds. We had gone to this restaurant a few months ago and got their delicious cheese curds before.

I really enjoyed the fried cheese curds from Riviera Bar and Grille. These curds are made with Asiago cheese which is different than most fried cheese curds. A cheddar cheese product is usually used in fried cheese curds. Asiago cheese has a bit of a different flavor than cheddar cheese; it is similar to Parmesan cheese.

After glancing over the menu, we decided to choose the Asiago cheese curd basket. Patrons of the restaurant can choose two dips to consume with their basket. Some of the choices of dips include basil and saffron mayo, cajun remoulade, honey mustard aioli, roasted red pepper ketchup and others. We choose basil mayo and cajun remoulade. Both of the dips were excellent and went perfectly with the fried Asiago cheese curds. I really enjoy the wide variety of dips that the restaurant offers.

When we received our cheese curds, we consumed them right away. The curds came in a cylindrical shaped container which added to the presentation of the cheese curds. The cheese curds were perfectly fried and not overdone. The curds are formed in a square shape because presumably that is the easiest way to cut up the Asiago cheese and fry it.

Overall, these Asiago fried cheese curds from Riviera Bar and Grille are delectable. I would go back any day because of the unique type of cheese used and the wide variety of dips served with the curds.

I got some information about common cheese used for curds from this website: https://whatscookingamerica.net/History/CheeseCurds.htm
